Abstract
The antioxidants were extracted from black bean residue by ethanol,ethyl acetate,hexane,methyl alcohol and water,was studied.Four methods for antioxidant activity evaluation,including DPPH scavenging activity,ABTS·+,reducing power,and β-carotene methods,were used for evaluation of the antioxidant activity of the extracts.The results indicated that the methyl alcohol and water extracts of black bean residue showed higher antioxidative properties than those of the other three ones.The higher total phenolic content of the five extracts may account for this.
