Abstract
Accumulation of arsenic compounds can cause acute or chronic poisoning.Arsenic in organism was mainly organic arsenic.The arsenic toxicity and Carcinogenicity mainly depend on the content of inorganic arsenic.Arsenic as a non-intentionally addition of pollutants,the maximum levels of total arsenic or inorganic arsenic were defined in various foods.Hydride Generation-Atomic Fluorescence Spectrometry(HG-AFS) was adopted to determine the total arsenic and inorganic arsenic in plant derived foods.The distribution character of total arsenic and inorganic arsenic in different plant derived foods were discussed,which would help to understand the arsenic accumulation ability of different plants.
