Abstract
In different simulate gastric juice in vitro,the rate of nitrite scavenging and nitrosamine interdiction of purple sweet potato anthocyanin was measured by spectrophotometry to explore the inhibition of nitrosation of simulated condition of gastric juice,reaction time and concentration.The results showed that the rate of nitrite scavenging and nitrosamine interdiction increased markedly with the concentration and reaction time,the level also differed in different simulate gastric juice.
