Abstract
The extraction process of flavonoids from apple peels by the ultrasonic assisted technique was studied.Based on single factor test,response surface methodology(RSM)was used to study effect of the ethanol concentrations,ratio of solutions to material,extraction time on extraction rate of flavonoids.The best extraction conditions were determined as follows:ethanol concentrations 50.3%,ratio of solutions to material 28.9:1,time 49.1min,the flavonoids yield was 19.32mg/g.
