Abstract

Studying and analyzing on synthesizing higher alcohols in beer and controlling it's measures in the paper. Higher alcohols can be reduced by improving saccharomyces cerevisiae, optimizing fermenting techniques and culture medium, in order to increase beer quality and decrease production cost.
