Abstract

The physical and chemical properties of maize purple plant pigment were studied.The results showed that the maize purple pigment was water soluble.The pigment was bright red in acid medium,whose max imum absorption peek was 515 nm.The pigment possessed high stability to heat,fructose com syrup,sucrose,glucose and phenylacid sodium.The pigment was sensitive to sunlight,H2O2,Na2SO3 and ascorbic acids.Metallicion Fe3+and Sn2+showed harmful effect to the color of the pigment.
