Study on the Extraction of Oligosaccharides from Yacon by Homogenate Extraction

Abstract

In this paper,the effects of time,temperature,ratio of solid to liquid(W/V),homogenate time,homogenate speed on the yield of yacon oligosaccharides were researched and the parameters for optimum yield were obtained.The optimum technology parameters for homogenate extraction were : homogenate for 90 seconds with 2500 r/min,extraction 3h at 80 ℃ with 1∶20 ratio of solid to liquid.
