Abstract

This paper is related to the phosphorylation of soy protein isolate with phosphorus oxy-chloride and the functionalities of phosphorylated soy protein isolate. The results showed that solubility, emulsifying properties and viscosity of phosphorylated soy protein isolate changed in different degree.
