Abstract
The purpose of the present study was to optimize the decolorization of soybean oil using single-factor design and response surface methodology and to compare the color reversion of soybean oil treated with attapulgite clay with conventional decolorized soybean oil after heating at 105 ℃.The optimal decolorization conditions were 32 min,110 ℃,250 r/min of stirring speed and 3% of decolorizing agent.Under these conditions, the decolorization ratio of soybean oil was 71.83%.Comparative results showed that the soybean oil treated with attapulgite clay was more stable and more resistant against color reversion.
