Abstract
In this paper,the research of the chicken protein hydrolysate by the enzymatic hydrolysis is studied.The optimum condition for trypsin,neutral protease,papain,acid protease,alkaline protease,pancreatin to hydrolysis are determined by monofactorial experiments,and it come to a conclusion that trypsin and papain have much more hydrolysis effciency.Combined hydrolysis of double enzymes is also studied.In double enzyme hydrolysis,we find that when trypsin and acid protease hydrolyze chicken together at their optimum condition respectively,the hydrolysis degrree is highest.Then we make further work to determine the condition of double enzyme hydrolysis,which is trypsin hydrolysis for 3 hours at 50℃,pH8.5,enzyme amount 4 000 U/g protein,solid/fluid 1∶4 and then acid protease hydrolysis for 2 hours at 45℃,pH2.5,enzyme amount 4 000 U/g protein.The degree of hydrolysis and protein recovery of the hydrolysis are 40.5% and 81.0%,respectively.
