Abstract
Taking cornstarch as test material,moisture content,reaction temperature,reaction time and the amount of 1% hydrochloric acid as test factors,the process of white dextrin by dry method was optimized by orthogonal test.The physicochemical properties of white dextrin were investigated.Results indicated that the optimum process parameters were that moisture content was 24%,reaction temperature was 130℃,the quality ratio of 1%HCl/starch(V/W)was 11% and reaction time was 3.0 h.The chromatism of white dextrin was different significantly compared with that of cornstarch and the dextrin from market.Its solubility was 78.56%,much higher than that of cornstarch,and the resistant starch content was 4.4%,which was also significantly higher than the other two.
