Abstract

The antioxidant properties of quercetin-Mn(Ⅱ),quercetin-Co(Ⅱ),quercetin-Ni(Ⅱ),quercetin-Cu(Ⅱ),quercetin-Zn(Ⅱ) complexes were evaluated by · OH and O2·-scavenging activities. In comparision with quercetin,the six complexes showed that · OH and O2·-were scanvenged in the optimum concentration range.
