Abstract
In this paper the production conditions of lipase from Rhizopus ZZ-3 were optimized and its enzymatic properties were studied. The results indicated that the suitable conditions for lipase production from Rhizopus were as the follows: soy powder 3 g /100mL,(NH4)2S04 0.3 g /100mL,MgS04 0.2 g /100mL,K2HPO4 0.2 g /100mL,soybean 0.3 g /100mL,pH natural. The highest lipase activity was 124.60 U /mL on the condition of 28 ℃,150 r / min.The properties of the lipase was also characterized. The optimal temperature and pH of lipase was 37 ℃ and 7.5.The lipase was relatively stable in pH range of 7-9 and at 40 ℃.
