Determination and Analysis on Amino Acids in Scales of Semilabeo prochilus

[Objective] The aim was to understand the content and composition of protein and amino acids in scales of Semilabeo prochilus.[Method] The contents of crude protein and amino acids in the scales of Semilabeo prochilus were determined by the conventional analysis and biochemical methods.[Result] The content of protein was 82.10%(dry),and the composition of amino acids of scales was 17,among which there were 7 essential amino acids for human needs.In dry sample,the total content of amino acids was 76.11%;the content of essential amino acids was 15.46%;4 kinds of delicious amino acids and 3 kinds of branded-chain amino acids was 36.48% and 6.19%,respectively;Gly was the most abundant(17.47%)and Pro was the second(11.93%) in all amino acids of the scales;the percentage of essential amino in total amino acids(EAA/TAA) was 20.31%.According to the nutritional evaluation,amino acid score(AAS) and chemical score(CS) were 0.24 and 0.36 respectively and the essential amino acid index(EAAI) was 32.92,so the constitutional rate of essential amino acids didn't accord with FAO/WHO standard.[Conclusion] The protein of Semilabeo prochilus's scales was incomplete protein and had little nutritive value,but it could be used as raw materials of extracting collagene and food flavor enhancer,being used in medical,food and chemical industry.
