Abstract
Mango as raw materials, through the single factors and orthogonal test, the effects of different amounts of drying aids on setting powder rate, solubility and moisture content of mango powder were studied. The results showed that the best recipe of mango powder was: maltodextrin 30%, β-Cyclodextrin 5%, and soluble starch 5%.
