Study of Scavenging Activity of Vegetable Juice on Sodium Nitrite

Abstract

Scavenging activity of vegetable juice include cucumber juice,radish juice,tomato juice,daikons juice and squash juice was on sodium nitrite investigated.Sodium nitrite scavenging activity of different concent ration and mixed vegetable juice was determined by spect rophotometry under pH value which was simulated human gastric juice.The results showed that the scavenging activity was positively correlated with the concent ration of vegetable juice.The scavenging rate of cucumber juice,radish juice,tomato juice,daikons juice,squash juice was 88.14%,77.88%,64.96%,56.11% and 18.94% respectively.The scavenging rate of mixed juice was higher than those of single vegetable juice,the scavenging rate of mixed cucumber and radish juice,cucumber and tomato juice,radish and tomato juice was respectively 87.08%,85.31% and 80.71%,and it was 34.34% of daikons and squash juice which was the lowest.The scavenging rate of five mixed vegetable juice was 78.23%.Vegetable juice had scavenging activity,the scavenging capability of mixed juice was higher than those of single vegetable juice.
