Abstract
Granular cold-water-soluble sweet potato starch was prepared by alcoholic-alkaline treatment.The effects of the ratio between alcohol and starch(dry basis),the dosage of sodium hydroxide,the ratio between water and starch(dry basis),reaction temperature and reaction time on cold-water solubility of starch were analyzed.The maximum response at the optimal saponification conditions can be obtained.The cold-water solubility was 87.81%,when the ratio between alcohol and starch(dry basis)4.0:1,the dosage of sodium hydroxide 27.0 g,the ratio between water and starch(dry basis)2.0:1,reaction temperature 35 ℃,reaction time 15 min.
