Application of Carbon,Nitrogen,Sulfur and Hydrogen Stable Isotope in Chicken Origin Traceability

Abstract

The values of δ13C,δ15N,δ34S and δ2H of chicken crude protein collected from nine regions distributed in Beijing,Shandong,Hunan and Guangdong and the value of δ18O of feeding water of the corresponding regions were determined by isotope ratio mass spectrometry.The results of multivariate analysis of variance showed that the values of δ13C,δ15N,δ34S and δ2H of chicken crude protein of different regions were significantly different(p0.05) and that the δ18O values of the feeding water of each region were positively correlated significantly with the δ2H values in chicken crude protein(p0.01).Based on the values of δ13C,δ15N,δ34S and δ2H,the correct rate of the discriminant analysis was up to 100%.The results also showed that carbon and nitrogen isotope ratios were influenced by the feeding and climate and that sulfur isotope ratios were influenced by geographical location and features of producing regions.
