Abstract

The extraction rate of insoluble dietary fiber( IDF) was evaluated by response surface method( RSM)with different addition of enzyme concentration,reaction temperature and hydrolysis time. The results showed that the optimal extraction conditions were enzyme concentration of 4%,reaction temperature of 60 ℃ and hydrolysis time of 5 h.In conditions of the optimal extraction,the extraction rate of IDF was 56. 27%.
