Research Advance of Chitosan and its Derivatives' Application on Food Industry and Agriculture

As a natural edible alkalescent polysaccharide,chitosan had many advantages such as high value-added,a kind of renewable resources,antibacterial,non-toxic,easy to be filmed,biodegradable,and chelating heavy metal.The advance in research of chitosan and its derivative on food industry and agriculture was summarized.The application of single chitosan,modified chitosan and composite in food preservation was overviewed.The plants,antibacterial antioxidant effect,clarified fruit juice,additives and the food industry wastewater treatment were introduced in detail,and the future development of fresh film of chitosan was prospected.
