Abstract
Acetic acid was chosen for the best extraction solution by the choice experiment in this paper,then orthogonal comparison of four factors and three levels,L9(34) was designed to study the impact of various factors on the process,i.e.the impact of extraction concentration,extraction temperature,extraction time and the ratio of different materials on the rate of extraction of anthocyanins from purple corn.According to the results the optimum extraction conditions were determined as follows:pH 2.5 acetic acid solution for extraction solvent,the temperature heating at 60℃ for 60 minutes,the ratio of materials for 1∶10.The ratio of extraction for twice reached 80.1%.
