Abstract
The walnut protein was separated from walnut slag after extracting grease. The high degree hydrolysis walnut polypeptide was obtained through compound hydrolysis by acid, alkaline and neutral protease. The antioxidant activity of walnut polypeptide was investigated by measuring the superoxide anion free radical(O2-·) scavenging activity, hydroxyl radical(·OH) scavenging activity and DPPH scavenging activity. Results showed that the degree of three kinds of protease hydrolysate could reach 45.58%. Walnut polypeptide had certain antioxidant activity in vitro, the total reducing power, O2-·,·OH and DPPH scavenging capacity was in concentration-response relationship with polypeptide concentration.
