Abstract

Production of yeast extract with waste beer yeast was investigated .The results indicated the optimum autolysis conditions were as follows: adding 3% salt as autolysis promoter, pH 5.0, at 50℃ and 10% beer yeast suspension for 40 hours,the content of amino acid nitrogen in supernatant was 0.498g/100mL and recovery was 47.50%.
