Abstract
The effects of ultrasonic treating of time,temperature,sequence in process,sodium chloride and sweet potato solution concentration on preparation of sweet potato retrogradation resistant starch(RS3).The results showed that the optimal conditions were:concentration of starch 20 %,addition of sodium chloride 2.0 g/100 mL,addition of α-amylase 200 U/100 mL,hydrolysis temperature 95 ℃,hydrolysis time 30 min,the ultrasonic process was added between hydrolysis and autoclave,its optimum temperature and time were 30 ℃ and 60 min,autoclaving-temperature 120 ℃,autoclaving-time 30 min,retrogradated time 12 h,the yield of RS3 was 8.2 %,which 2.28 fold higher than that of control group 2.5 %.
