Abstract
Using sweet persimmon fruits as contrast sample,the change of the form of tannic cells in astringent persimmon fruits during the process of growing,deastringenting and reastringenting were observed.The results are as follows:With the astringent persimmon fruits growing,tannic cells gradually increase in number and enlarge in size until the beginning of September.Meanwhile,the taste of astringent persimmon fruits becomes stronger.The change of tannic cells in persimmon fruit deastringented by 4 kinds of methods were similar,i.e.all the tannic cells became smaller and scattered.Tannin of tannic cells in reastringented persimmon fruits escaped from the cells and formed a netshape structure in the flesh tissue.
