Abstract
The contents of amino acids,mineral elements,polysaccharide and total protein in the fruit of Capparis spinosa had been determined by automatic amino acid analyzer HITACHI Model 835-50,Flame Atomic Absorption Spectrometry Model Aanalyst 800,Flame Spectrometer,Phenol-sulphuric acid colorimetry and Kjeldahl s method respectively.The result showed that the fruit of Capparis spinosa contained eighteen species amino acids,including 7 species essential amino acids for human body.Total amino acid contents of the fruit was amounted for 16.91%.Total polysaccharide amounted for 23.37%.Total protein amounted for 16.94%.The fruit of Capparis spinosa content rich nutritional ingredient,which reserved to be further exploited.
