Ultrasonic Extraction of Polyphenols from Grape Seeds and Its Antioxidant

Abstract

[Objective] The research aimed to study the ultrasonic extraction and antioxidant activity of polyphenols extracted from grape seeds.[Method] Polyphenols of grape seeds was extracted by ultrasonic extraction and antioxidant activity was determined by scavenging effect on Fenton reaction ·OH radical with spectrophotometry.[Results] The optimum condition for the extraction of polyphenols were as follows: 60 min of ultrasonic time,75% of alcohol and 1∶ 20 of solid-liquid ratio.An extraction rate for the polyphenols from grape seeds was 10.71% under the optimum condition.The maxium scavening rate of 0.093 g/L extraction on ·OH was 87.12 % and IC50 reached 0.031 g/L.[Conclusion] The polyphenols from grape seeds obtained by ultrasonic extraction have good antioxidant activity.
