Abstract
The nutritional components and quality in muscle of cultured Synechogobius ommaturus were analyzed and evaluated by biochemical analysis methods. The results show ed that the moisture,crude protein,crude fat,and crude ash contents of fresh muscle of S. ommaturus w ere( 82.10±0.21) %,( 15.34±0.20) %,( 0.87±0.13) %,and( 1.12±0.03) %,respectively. Glu( 12.71%),Asp( 8.42%),Lys( 8.16%),and Leu( 6.51%) were the highest contents in 18 kinds of found amino acids in dry muscle. Total amino acid( TAA),total essential amino acid( EAA),and total delicious amino acid( DAA) contents of dry muscles w ere83.36%,31.40%,and 31.79%,respectively. The EAA /TAA and EAA /NEAA w ere( 37.65 ±0.63) % and( 70.10±1.90) %,respectively; according to nutrition evaluation in amino acids score( AAS) and chemical score( CS),the first limited amino acid w as Trp,the second limited amino acid w as Val; the essential amino acid index( EAAI) and the ratio of branched chain amino acid to aromatic amino acid( F value) w ere 70.19%and 2.22,respectively. The saturated fatty acids( ∑SFA),poly-unsaturated fatty acids( ∑PUFA),∑ n3 PUFA,and EPA +DHA w ere( 30.23±0.48) %,( 49.52±0.91) %,( 39.54±1.12) %,and( 42.47±1.10) %,respectively. Therefore,S. ommaturus is nutritional,delicious,and healthy to human,and is a new potential candidate for aquaculture.
