Abstract
Using active dry yeast as material,yeast extract was prepared by autolysis-enzymolysis method.The key factors affected yeast autolysis,such as autolysis temperature,yeast suspension concentration,autolysis pH value,added lysing enzymes varieties,added protease varieties and addition quantity,autolysis promoter,were studied with indicators of yield of amino nitrogen and yeast extract.And autolysis time was determined with orthogonal experiment design.The result showed that the autolysis-enzymolysis method was ideal for yeast extract preparation and the yield of amino state nitrogen and yield of yeast extract under optimum conditions were 3.19% and 51.31%,respectively.
