Abstract

Nata de coco is a kind of bacterial cellulose which has distinct gel-like texture,produced by Acetobacter through the fermentation of coconut water.This article introduced the production,physicochemical characteristics,processing properties and functional properties of Nata de coco.Moreover,the future utilization and study on Nata de coco was discussed.
