Abstract
The emulsifying activity(EA) of soybean protein isolate(SPI) was measured with spectrophotometer at 500nm.The effect of the ratio of soybean oil to aqueous protein solution,degree of homogenization and dilution times on the test result was studied.Several SPI were used to repeat the experiments.The results showed that the value of emulsifying activity with high repeatability and low systematic error was obtained under the following conditions: the ratio of soybean oil to aqueous protein solution was 0.25;speed of homogenization was 10 000r/ min;homogenization time was 1 min;50μL aliquots of the emulsion were diluted for 100 times with SDS solution.
