Analysis and evaluation of nutritive composition in body walls for different age Apostichopus japonicus(Selenka)

Abstract

The nutritive composition,amino acids and fatty acids in Apostichopus japonicus body walls were investigated for different ages(1-year,2-year,3-year) with the biochemical methods.The results showed that the moisture content was reduced with the development of Apostichopus japonicus,while the crude ash content increased.The contents of crude protein and crude fat of 3-year A.japonicus were the highest among the three groups,and it showed the accumulation effect.16 types of amino acid were detected in the all age samples.2-year A.japonicus were the lowest amino acid contents.However,it was better for human's health compared with other groups according to the standard of FAO/WHO based on a balanced composition in amino acid.There were significant differences in fatty acids composition among the experimental samples.C14:0 and C18:4n-3 could be detected only in 1-year and 3-year A.japonicus,C16:2 only for 1 year,C17:0 only for 1 year and 2 year,C18:3n-3 only for 1year and 3 year,C20:3n-6 and C22:0 only for 1 year.In fatty acids content,UFA was reduced with the development,while the DHA+EPA were increased.In addition,the AA content was the highest(15.53%) for 1 year,and infrequency in other marine product.
