Abstract
Mulberry red pigment is a safety, not poisonous edible natural pigment. This paper uses mulberry pomace as experimental raw material, and sysmeticly studied the mulberry red pigment extraction technology with solvent extraction method. Through the experiment, the parameters were reached. The results show that The optimal parameters of solvent extraction from mulberry residue were as following: solvent is 80% ethanol with 0.01% HCl, material/solvent ratio 1:20, extracting 1h at 20℃, for one time. The extracting rate reached 93.07%.
