Abstract

In order to make full use of the hazelnut shells, the extraction method, the antioxidation and antibacterial activities of brown pigment in hazelnut shells was studied. The optimization of the extraction conditions of brown pigment was obtained by orthogonal test. The best conditions were:The temperature and time of extraction were 95℃ and 140 min respectively. The solid-liquid ratio was 1 ∶ 30.Under the above conditions, the extraction efficiency was 3.54 times than before. The value of brown pigment from hazelnut shells was 73.22 in distilled water. The maximum absorption wavelength of brown pigment was 280 nm.Fenton reaction system and thiobarbituric acid method were used to detect the antioxidation. It had good capability of clearance rate of hydroxyl radicals(·OH)at the concentration of 1.0 mg/mL,and the clearance rate was 99.13%.It's anti lipid peroxidation capacity reached about 20% of ascorbic acid. These indicated that the pigment could inhibit the growth of Staphylococcus Aureus. The minimal inhibitory concentration(MIC)was 0.05g/mL.
