Abstract
Fruit wine is a low alcohol beverage made from fruit,which has natural aroma of fruit.It contains kinds of vitamins and amino acids and is a healthy functional food.Selection and breeding of yeast,clarification for stability of final products,aging technology and the analysis of aromatic components of fruit wines were reviewed in this paper.
