Abstract
Based on the single-factor method, orthogonal method was applied to optimize conditions for extracting pectin from orange peel. The research results showed that the temperatures, the ratio of orange peel over hydrochloric acid,pH value, the stirring time and the alcohol detergent concentration after filtering, had great influences on the pectin extraction rate. When the temperature was 90℃,the ratio of orange peel over hydrochloric acid was 1∶8,pH value was 2.0,the stirring time was 30 min,the extracting rate was the highest.
