Abstract
[Objective] To optimize the extracting process of black rice pigment from Vaccinium bracteatum and investigate the stability in application environmental of the pigment. [Method]Factors( solid-liquid ration,temperature and extraction time) and stability in acidic,alkaline,room temperature or high temperature storage environment were investigated by single factor experiment design and absorbance test. [Result] The optimal extraction conditions were the ratio of material to solvent 1∶ 10,the extraction temperature 85 ℃ and the extraction time 90 min. The better stability of black rice pigment of Vaccinium bracteatum were showed when stored in neutral or acidic solution but poor stability stored in alkaline or high temperature environmental solution. [Conclusion]The black rice pigment of Vaccinium bracteatum should be stored in neutral solution under room temperature.
