Abstract

Taking strong-gluten wheat Jimai 20 and weak-gluten wheat Lumai 21 as test materials, the effects of sulfur fertilizer on the floret development, protein components and several quality indicators were studied under 7.28 mg/kg of available sulfur in 0~20 cm soil layer. The results showed that under the conventional cultivation and management conditions, sulfur fertilization increased the floret number, reduced the male-sterile floret number, increased the seed setting rate and the contents of prolamin, glutenin and albumin. The grain wet gluten, sedimentation, dough development time and stability time also increased in different extent after sulfur fertilization. It also had no significant effect on 1 000-grain weight, but significantly decreased the bulk density of Jimai 20.
