Abstract
The preparation of soy peptides was studied by hydrolyzing soy protein with compound enzyme of papain and AS1.398 neutral protease.The results showed that the optimum conditions were as follows:enzyme activity ratio of papain to AS1.398 neutral protease 1∶1,enzyme dosage 12 500 U/g,mass concentration of substrate 100 g/L,pH 7.5,hydrolysis temperature 40℃.Under the optimum conditions,the relationship of hydrolysis time with degree of hydrolysis was researched,and the result indicated that the better hydrolysis time was 4.5 h.
