Abstract
Using the yield of hydrolyzed protein and the degree of protein hydrolysis as testing indexes,t he optimal conditions of hydrolyzing degreased soybean powder were studied.The results showed that the optimal pH value,reaction temperature,reaction time,dosage,and liquid-to-solid ratio for the enzymatic hydrolysis of alcalase were pH 7.5,60℃,6 h,1.5% and 7:1,respectively; the optimal pH value,reaction temperature,reaction time,dosage,and liquid-to-solid ratio for the enzymatic hydrolysis of flavourzyme were pH 5.5,55℃,9 h,1.5% and 7:1,respectively.Under the optimal conditions,the yield of hydrolyzed protein by alcalase was up to 50.6%,the degree of protein hydrolysis by flavourzyme was 26.7%.
