Abstract
This paper reviewed the biological and ecological characteristic and the planting management of the Jerusalem artichoke(Helianthus tuberosus L.) in Qinghai plateau. The Jerusalem artichoke contained rich in inulin .After processing achieved alantin by modern biological technology. The inulinase change them into oligosaccharides and ultrahigh fructose glucose syrups(UHFGS) by hydrolyzing.The inulin and oligosaccharide and UHFGS were new manifold burden and whole water-soluble meals fiber. At the same time they were propagation factor of lactobacilius bifidus . The development of Jerusalem artichoke must have a extensive prospect.
