Abstract
In this paper, soluble dietary fiber was extracted from soybean dregs by steam cooking and xylanase. The effects on the extraction yield of soluble dietary fiber, such as pH value, treatment temperature, extraction time and the amount of enzyme was studied by response surface method. The optimum conditions were achieved as follows: pH was 4.00, treatment temperature was 74.90 ℃, time was 1.50 h and enzyme adding dose was 45.54 U/mL. Under the optimum condition, the soluble dietary fiber extraction was 16.71%.
