Abstract
Effects of some factors on extraction of red pigment from fresh roses and stability of pigment were studied.The results show that,the rose pigment belongs to anthocyanin.The optimum extracting conditions were: pH value is 1,the concentration of ethanol is 70%(V/V),the ratio of liquid and solute is 1∶8,the temperature is 60℃,and the extracting time is 1 h.Rose pigment is sensitive to light and heat,and it shows different color in different condition of pH value.The effects of metallic ions Na+、Zn2+、Ca2+ on the pigment are low,but Cu2+ and Fe3+ have destroyed effect on the pigment.Rose pigment is steady when reducer Na2SO3 is added,but the color fades when oxidizer H2O2 exits.
