Abstract
Carnosine and Anserine are a kind of histidine dipeptide and naturally exist in the skelecton and brain tissues of vertebrates. They are water-soluble and have many characteristics such as strong hot stability, anti- oxidation, anti-decrepitude and so on. They have been used as natural anti-oxidants in food industry. In this article, we made a summarization about the distribution of these dipeptide in living creature, the biological functions, the extraction and appraisement methods researching. Their applied values in future was discussed.
