Abstract
The fatty acid composition and triglyceride structures of grape seed oil were determined by GC and steapsin hydrolysis.The result showed that the content of unsaturated fatty acids was 89.34%,and linoleic acid was 75.25% the total fatty acid content.Based on the 1,3-random-2-random distribution theory,the triglycerides in grape seed oil were calculated,and the triglycerides mainly contained LLL 42.35%,Sn-LOL 16.69%,Sn-POL 2.17%,and Sn-LLP 5.52%.The results of high performance liquid chromatography and Rancimat indicated that the content of vitamin E in the grape seed oil was 21.02 mg/100 g,and the value of oxidation stability at 100 ℃ was 2.6 h.Based on the analysis of physicochemical properties,the iodine value was 131.7 g/100 g,belonging to dry oil.
