Abstract
The moisture,ash,fat,starch,minerals,dietary fiber,amino acids in Kudzu vine root,dried Kudzu vine root slices and Kudzu vine powders were studied.The results showed that Kudzu vine root,dried Kudzu vine root slices and Kudzu vine powders were rich in starch,dietary fiber,flavones,minerals and various amino acids.In Kudzu vine root,dried Kudzu vine root slices and two types of Kudzu vine powders,the contents of starch were 51.61%,46.13%,92.45% and 93.60%,respectively;Dietary fiber were 30.95%,36.76%、5.37% and 4.43%,respectively;And total flavones were 5.11mg/g,2.57mg/g,0.79mg/g and 1.05mg/g,respectively.Besides,Kudzu vine roots were rich in K,Mg and Ca.This research provided a basis for further research and development of Kudzu Vine Root.
