Abstract
Twenty-four pure strains were isolated from three different fermentation pits for Luzhou-flavor liquor and 20 strains among them were identified as Pediococcus damnosus,Pediococcus pentosaceus, Pediococcus acidilactici, Pediococcus inopinatus, Pediococcus parvulus, Pediococcus dextrinicus and Pediococcus stilesii through physiological and 16S rRNA phylogenetic analysis. The other four strains belonged to two new species because of their special characteristics: Pediococcous cellicola and Pediococcous ethanolidurans.
