Abstract

【Objective】 In order to acquire the optimum procedure for effectively extracting polyphenolic compounds from apple pomace,investigation on high hydrostratic(HHP) pressure was carried out.【Method】 The effects of different parameters such as high hydrostratic press,high hydrostratic press time,ethanol concentration and ratio of solvent to pomace on the extraction of apple-polyphenols from apple pomace were studied.The experiments were designed and optimized with response surface method(RSM).A second order quadratic equation for polyphenols extraction was finally obtained.【Result】 The results showed that the optimum procedure parameters of high hydrostatic pressure extraction apple polyphenol were pressure of 160 MPa,time of 9 min,ratio of solvent to pomace of 1∶28,and 60% ethanol used as extracting solvent,under which the extraction rate of apple polyphenols from apple pomace reached 2 087.22 mg/kg.【Conclusion】 The model was established and the optimum procedure parameters of high hydrostatic pressure extraction apple polyphenol were obtained.
