Abstract

The purified procyanidins were obtained from grape seeds and its scavenging activity on DPPH and hydroxyl radicals was determined. The results showed that the 50% scavenging concentration ( EC 50 ) was 44mg/L in the DPPH and 80 percentage hydroxyl radicals was scavenged when the concentration was 10g/L. These results suggested that procyanidins would be a effective natural free radical scavenger.
