Abstract

The optimal conditions for extraction and purification of polysaccharide from Hericium erinaceus were studied in this paper. The combination of hot water extraction and supersonic extraction were used to the optimal parameters were as follows: the ratio of water to raw material being 20, extraction temperature being controlled at 90 ℃, pH being adjusted to 7.5, the time of extraction being 8 hours, the time of supersonic extraction for 50 s. Under this condition, the extraction rate was 5.43 %. The enzymolysis and Sevag method were used for removing residual protein. The chemical homogeneity of the Hericium erinaceus polysaccharide was proved by sodium dodecyl sulfate-gel electrophoresis and Chromatography column.
